Due to the enormous range of environments in which coffee is grown, processed, bought and sold, coffee professionals follow a strict process for tasting, as developed by the Specialty Coffee Association of America (SCAA). This is the cupping process, and wherever you may be in the world, you'll find coffee professionals following the same protocols. One of the requirements of this process is the use of an appropriate cupping spoon - such as this!
The shape of a cupping spoon is carefully designed for collecting and sipping the correct amount of coffee. Hold it side on to your mouth and slurp the coffee - be sure to make as much noise as possible! You are trying to spread the coffee around your mouth, and if you are cupping a lot of coffee, you may need to eject the coffee into a spittoon afterwards.
