Produced by Mario Jose Ortez, his coffee trees are grown amongst other vegetation including guaba, which is a nitrogen binding legume with a sweet pulp. His farms biodiversity encourages plant and soil health, leading to higher quality coffee. Mario grows a mix of caturra, red catuai, yellow catuai and paca varieties on his farm, with only ripe coffee cherries selectively harvested between January and March each year by farm workers from the local communities.
